Oatmeal Chocolate Chip Cookie

This is a quick and easy recipe to satisfy your sweet tooth! I can never get enough of yummy cookies so here’s another one for you to try!

Prep Time: 15 minutes
Bake Time: 9-10 minutes

Ingredients:

3/4 cups packed light brown sugar

1/4 cup granulated sugar

2 tablespoon honey or agave

1/2 cup of melted butter (1 stick)

2 teaspoons vanilla extract

1 egg

1 1/2 cups all purpose flour + 3 tablespoons

1/4 teaspoon salt

1/2 teaspoon baking soda

3/4 cup semi-sweet chocolate chips + a few extra for topping (use 1/2 cup of chocolate chips if you prefer)

 3/4 cup quick oats

 

Directions:

Preheat your oven to 350 degrees.

Melt your butter in a small bowl for about 25-30 seconds in the microwave. Your butter will still have semi-solid pieces. Use a fork to mix the butter in the bowl.

In a medium bowl, combine the sugars and butter. Beat together until smooth and creamy.

Add in vanilla, egg and honey/agave. Mix together well.

Add the 1 1/2 cup of flour, baking soda and salt. With a spatula, fold the ingredients together. Add in the remaining 3 tablespoons of flour one tablespoon at the time, mixing together after each addition. You want your dough smooth and moist. If after the first or second tablespoon of flour, you notice it’s getting stiff, omit the remaining tablespoons of flour.

Add the chocolate chips and oats.

Scoop 20-24 balls and align them on the cookie sheet. Add the additional chocolate chips to the top of the dough balls by lightly pressing them in.

Bake for 9-10 minutes. You don’t want to over bake them. They will look pale on the top but should have a golden edges.

Let the cookies cool on the baking sheet for 15 minutes. Enjoy!!
