Quick + Easy Pasta Salad

Who doesn’t enjoy quick and easy? Especially if there’s pasta and involved! This recipe is meant to be simple but delicious to consume!

Prep Time: 10 minutes
Cook Time: 7-9 minutes
Build Time: 5 minutes

Ingredients:
1 3/4 cups pasta noodles of your preference

1 cup cherry tomatoes, sliced in half

1/4 red onion , sliced

1/2 cucumber, peeled & sliced

8 ounces small mozzarella balls (your choice how much)

1/4 cup parmesan

1/2 cup Italian dressing or vinaigrette , more if desired

1 tsp olive oil

6-8 slices of pepperoni or salami

Finishing salt if desired!

Directions:
Cook your pasta until al dente and drain. Take a medium to large bowl. With your pasta, add olive oil and toss. Slice your cherry tomatoes, onions, cucumber and pepperoni. Add all your ingredients in the bowl including mozzarella & parmesan. Pour your favorite Italian dressing and toss. Best if you let it marinate in the fridge for at least 1 hour. Add finishing salt (if desired) and serve with delight!
