Cinnamon Sugar Loaf
This loaf is incredible. Not only will your house smell like cinnamon sugar heaven, your tastebuds will be so grateful you made it! Just a heads up that you will need a few bowls (1 large, 2 medium and 2 small) to get started, a loaf pan, and 30 minutes prior to set out a few ingredients so they get to room temperature.
In the end, it is so worth it and pretty soon, your friends and family will beg you bring this to every gathering!
Prep Time: 40 minutes
Cook Time 50-60 minutes
Loaf:
1 ½ cup all-purpose flour
¼ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¾ cup granulated sugar
3 eggs (room temperature)
1 ½ teaspoon vanilla
½ cup salted butter (room temperature)
1/3 cup plain Greek yogurt
Cinnamon Sugar Filling:
3 tablespoons brown sugar
1 tablespoon cinnamon
1 tablespoon heavy cream or coffee creamer (I use vanilla creamer)
Cinnamon Sugar Crumble:
2 tablespoons brown sugar
¼ teaspoon cinnamon
Directions:
30 minutes before you start your loaf, take out your eggs, 1/3 cup Greek yogurt and butter and let it set out on the counter.
Preheat oven to 325.
In a medium bowl, combine your eggs and vanilla and beat until mixed together well.
In another medium bowl, cube your softened butter and add granulated sugar. If possible, warm the ingredients in the microwave for 10-12 seconds. We don’t want the butter hot, just barely melted into the sugar. With a fork or whisk, whip the butter and sugar together until fluffy.
Pour egg mixture into the butter + sugar bowl. Mix together well.
In a large bowl, combine flour, baking soda, baking powder and salt.
Slowly incorporate wet ingredients into the flour bowl with a wooden spoon or spatula. Add in the Greek yogurt until combined thoroughly. Set to the side.
In a small bowl, combine your Cinnamon Sugar Filling ingredients.
In another small bowl, combine your crumble topping ingredients.
Take your 9x5 OR 8x4 pan and spray it generously with cooking spray.
Take 1/3 of your batter and spread a layer at the bottom of the pan.
Take half of your FILLING and spread it across your batter, using a fork to incorporate in.
Add another 1/3 layer of batter to the pan and spread it across. Add the rest of the filling on top of that batter layer and spread the filling with a fork.
Add the last layer of batter, spread it out to make sure it reaches all sides of the pan.
Take a butter knife or skewer and swirl the batter in the pan gently. You don’t want to overmix.
Sprinkle the crumble topping on top.
Bake for 25 minutes then place foil cover on top and then bake for another 20 minutes. After 20 minutes, remove foil cover and bake for another 5-10 minutes, cover off.
Check to make sure it’s fully cooked by forking the center. If it’s clean, it’s done! If it doesn’t come out clean, bake for another 3 minutes.
Let cool for 10-15 minutes and enjoy!!
