Pumpkin Spice Rustic Loaf

Who doesn’t love an easy recipe? Especially an easy recipe for homemade bread! This easy rustic loaf is delicious with pumpkin butter, regular butter or on it’s own!

Prep Time: 15 minutes
Rise Time: 4 hours
Bake Time: 45 minutes


Ingredients:

3 cups bread flour (plus a bit more for kneading)

1 1/2 teaspoons salt

1/2 teaspoon sugar

1 teaspoon yeast

1 teaspoon pumpkin spice

1/2 teaspoon ground cinnamon

1 cup room temperature water

1/4 cup honey 

3/4 cup pumpkin puree

 

Directions:

In a small bowl, combine yeast, sugar and water. Cover with a light dish towel and put to the side. Let it rise for about 5 minutes.

 In a large bowl, combine flour, salt, pumpkin spice, cinnamon. Mix together.

 Add in pumpkin puree, honey and yeast mixture. Mix well until there are no dry spots. If the dough is too sticky, add one tablespoon at a time until the dough is easily coming off the side of the bowl.

 On a lightly floured surface, knead your dough for at least 5 minutes and shape into a ball.

 Place the dough ball back in the bowl, cover with a light kitchen towel and let it rise for 4 hours on the countertop.  

 Preheat the oven to 450 degrees with your Dutch oven inside.

 Place your dough on parchment paper and with a sharp knife or bread lame, score the top making a “X”. Gently set it inside the Dutch oven and place the lid on top. Bake for 30 minutes.

 Remove the lid and bake for an additional 10 minutes.

 Let it cool for at least 15-20 minutes before cutting into it. Enjoy with some pumpkin butter or regular butter!
