Summertime Spaghetti Salad
It’s no secret that I love pasta! Especially spaghetti! So here’s a recipe perfect for the summertime! This Spaghetti Salad is quick and easy! This might be your next “go-to” dish for your next gathering!
Prep Time: 15-20 minutes
Cook Time: 9-11 minutes (al dente)
Serves 4
Ingredients:
½ box of thin spaghetti (or ½ lb)
1 cucumber, diced
1 cup of cherry tomatoes, quartered
¼ cup red onion, chopped
¼ cup freshly grated Parmesan Cheese (topping)
Dressing:
½ cup extra virgin olive oil
¼ cup red wine vinegar
1 tablespoon sugar
1 ½ tablespoon Italian Seasoning
2 teaspoons paprika
¼ teaspoon celery seed
½ teaspoon garlic powder
1 teaspoon Lawry’s Seasoning Salt
Salt and Pepper to taste
Directions:
First, mix together all the dressing ingredients in a bowl or mason jar and place in your fridge.
Grate your parmesan and set to the side.
Cook the pasta according to the directions. While the pasta is cooking, chop all your veggies.
Drain your pasta and run cold water through it. Drain well.
Take your dressing out of the fridge and give it a good shake or mix. Add all your veggies on top of the pasta as well as the parmesan.
Pour your dressing over all the ingredients and mix well, making sure all the pasta is coated.
Serve as is or cover and place in the fridge for 1 hour before serving. Alternatively, you can place in the fridge overnight to let the flavors marinate together. (I personally like overnight but can be served fresh as well).
