Scrumptious Strawberry Cupcakes

I get a craving for cake almost every other day so this recipe for a one bowl cake is a lifesaver and my tastebuds sure do love them! They are so easy, you can whip this out during the weekday for a fun treat!

Prep Time: 15 minutes
Bake Time: 17-18 minutes
Cool Time: 30-45 minutes

Ingredients:
1 1/4 cup all purpose flour

1/4 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

3/4 cups granulated sugar

1/2 cup clear oil (vegetable, sunflower…etc)

1/2 cup regular Greek Yogurt

1 large egg

1 1/2 teaspoon vanilla extract

1/2 cup hot water (about 120 degrees)

2 tablespoons Strawberry Jello Powder


Frosting:

8oz cream cheese

1/2 cup unsalted butter

3 cups confectioners sugar

2 teaspoons vanilla

1 teaspoon Strawberry Jello Powder

Pinch of salt

Directions:

*Grab your unsalted butter & cream cheese from the fridge to get to room temperature before you start mixing your ingredients.

Preheat your oven to 350 degrees.

Combine all your dry ingredients first (flour, baking soda & powder, sugar, salt and strawberry jello powder)

Mix in your oil, water, egg, vanilla and yogurt.

Line your cupcake baking sheet.

Fill each liner about 1/3 way up, leaving space for the cake to expand.

Bake for 17-18 minutes. Cupcakes are done if you take a fork and pierce the middle and it comes back clean. If you get residue, bake for another minute.

While the cupcakes are baking, you can prep your frosting.

In a large bowl, whip together butter and cream cheese. Add vanilla and slowly add in the confectionary sugar, strawberry jello powder and pinch of salt. If using a hand mixer, mix together for a minute or two until fluffy. Alternatively, you can use a fork and whip together for at least 2 minutes.

Remove cupcakes from the oven and let it cool completely then you can frost away!
