Festive Sugar Cookies
This cookie recipe can be made for any occasion! Make it your own by adding festive toppings and sprinkles!
Prep Time: 15 minutes
Chill Time: 1 hour
Bake Time: 7-8 minutes
Ingredients:
2 ¼ cups all-purpose flour
¼ teaspoon salt
¼ tsp baking soda
½ tsp baking powder
1 tablespoon cornstarch
1 cup granulated sugar
½ cup unsalted butter (room temperature)
¼ cup whole milk yogurt or Greek yogurt (room temperature)
1 large egg (room temperature)
2 teaspoons vanilla extract
Frosting:
½ cup confectioners sugar
1 teaspoon vanilla
1 tablespoon milk + a tad bit more if needed
Directions:
1.5 hours before you start your cookies, measure out the yogurt and set your yogurt, egg and butter on the counter to get to room temperature.
In a large bowl, sift together flour, salt, baking soda, baking powder and cornstarch. Mix well with a spatula. (Sifting is key for this recipe. You don’t want to skip it)
In a separate bowl, beat together very softened butter and sugar until fluffy. Whisk in the vanilla and egg until smooth, then add the yogurt. Incorporate together well.
Add your wet ingredients into your dry ingredient bowl and gently mix with a spatula. You don’t want to over mix.
Once the dough is formed and there are no dry spots, cut out two 10x10 pieces of parchment paper and place the dough on one parchment paper. Take the other parchment paper and put it on top of the dough. Flatten it out to a about a 6” disk.
Place on a baking sheet and let it chill in the fridge for at least 1 hour.
Preheat oven to 375 degrees.
Remove your dough from the fridge and transfer onto a lightly floured surface.
Roll out your dough until about 1/4 inch thick then use your preferred cookie cutter. I used a Christmas tree shape but whatever you have is fine!
Place cookies on a lined baking sheet and bake for 7-8 minutes until the bottoms are barely tan.
While the cookies are baking, make your frosting. Take ½ cup of confectioners sugar, 1 teaspoon vanilla and 1 tablespoon of milk. If it’s too thick, add a little bit of milk at a time until it’s a fluid, semi-thick consistency.
Let your cookies cool completely before frosting!
Add your favorite festive sprinkles and enjoy!
Happy eating!
